Curried Carrot and Parsnip Soup Recipe

Ingredients

  • 1 onion
  • 2 parsnips
  • 2 carrots
  • 1 clove of garlic
  • 2-3 tablespoons of your preferred curry paste
  • 700 ml of chicken stock
  • 20 grams of butter or a tablespoon of virgin olive oil
  • 150 ml of coconut milk
  • COOKING INSTRUCTIONS

    Chop up the carrots and parsnips into small pieces. The smaller you chop those the faster they cook. Then finely chop the garlic and the onion. I prefer to use a red onion for this soup but that is optional.

    If you have a saute function on your soup maker, then add the oil garlic and onion and cook for about 2 minutes. Then add the remaining ingredients. If you don't have a saute function, then simply add all of the ingredients above to the soup maker and put on a simmer cycle for about 21-25 minutes. Now after that you can use the blend function if you prefer your soup that way.

    Broccoli & Stilton Soup Recipe

    Ingredients

  • 400 grams of broccoli chopped into florets
  • 1 potato roughly chopped
  • 1 medium sized onion roughly chopped
  • 1 leek roughly chopped
  • 125 grams of crumbled stilton cheese
  • 700 ml of chicken stock
  • 25 grams of butter
  • 1 tablespoon of extra virgin olive oil
  • 4 tablespoons of double cream
  • COOKING INSTRUCTIONS

    Melt the butter and olive oil on a low heat. Then add the onions and leeks and cook until softened. Stir regularly. If your soup maker has a saute function you can add directly into the maker.

    Add the broccoli, potato and stock and bring to the boil. Then add to the soup maker and put on a simmer cycle for about 21-25 minutes. Now after that you can use the blend function if you prefer your soup that way.

    This timing is also ideal for Morphy Richards soup makers. You may find other models differ a little so check your instructions.

    When the soup is ready, add the stilton. Continue to stir until the cheese has melted.

    If you want the double cream, then add when served in the bowls. You can also season to taste with salt and pepper. You can also garnish with a few sprigs of parsley.

    How To Serve This Broccoli & Stilton Soup?

    This is a British classic. It combines one of the healthiest vegetables on the planet, with the great taste of a Stilton cheese. You can use other cheeses but I have always found that Stilton works best. Now the double cream is clearly full of calories, so the healthy among you may want to leave that out, or replace it with something healthier.

    Red Lentil Soup Maker Recipe

    Ingredients

  • 180 grams of split red lentils
  • 1 celery stalk finely chopped
  • 1 crushed garlic clove or 1 tbsp garlic puree
  • 2 tsp tomato puree
  • 1 potato finely chopped
  • 2 medium sized carrots finely chopped
  • 250 grams of chopped tomatoes (tinned also works)
  • 1.2 litres vegetable stock
  • COOKING INSTRUCTIONS

    Add the lentils to the soup maker along with the other ingredients. Always make sure that you have covered the line that indicates the minimum level in the soup maker to prevent any risk of burning.

    I always pick a "smooth" setting for this one and you can always blend it afterwards if you prefer it like that. 

    Simple as that!   Cook for 21 minutes in the soup maker. This timing is also ideal for Morphy Richards soup makers. You may find other models differ a little so check your instructions.

    Season to taste with salt and pepper. You can also garnish with a few sprigs of parsley.

    How To Serve Lentil Soup?

    I think this soup works best with a simple garnish and is an ideal choice for a cold winter's day.

    Chilli Bean and Tomato Soup Recipe

    Ingredients

  • 1 tbsp olive oil
  • 1 onion chopped
  • 1 crushed garlic clove or 1 tbsp garlic puree
  • 1 tbsp tomato puree
  • 1 tsp mild chilli powder (hot if you prefer)
  • ½ tsp cumin powder
  • 400g tin of chopped tomatoes
  • 500 ml vegetable stock
  • 400g tin of kidney beans or mixed beans
  • 1 red pepper
  • COOKING INSTRUCTIONS

    Using the sauté function on your soup maker, cook the onions along with the olive oil, garlic, chilli powder and cumin powder

    Add the tomato puree, chopped tomatoes, beans, vegetable stock and red pepper and change the setting on the soup maker to chunky.

    I am sure you have noticed how  good  presentation makes  food taste better. This soup looks  and tastes much better if it isn’t smoothly blended.

    How To Serve Your Chilli Bean & Tomato Soup?

    ​I think this soup works best with sour cream. Serve in bowls with a few broken tortillas sprinkled on top. I prefer the lightly salted plain tortillas so the flavours of the soup are not overpowered.

    Finish it off with that spoonful of sour cream and enjoy.

    Cream of Asparagus Soup Recipe

    Ingredients

  • 500 grams of Asparagus chopped
  • 100 grams of onion chopped
  • 110 grams of potato chopped
  • 150 ml of cream
  • Vegetable Stock
  • 1 tbs of butter
  • COOKING INSTRUCTIONS

    Sauté the onions in the butter until soft. Add the asparagus to the onions and lightly season with some salt and pepper.

    Add these to the soup maker and then add the water, stock and potato and stir well. Don't forget the mixtures should be above the minimum level and below the maximum level.

    I find this one is best blended or smooth setting for 21 minutes.

    Season to taste with salt and pepper.

    If you plan on having some of this and freezing the rest, then leave out the cream and use water instead.

    How To Serve Your Cream of Asparagus Soup?

    I think this soup works best with the cream. There is something about that which works really well with this soup. Lightly grated lemon makes an interesting garnish though personally I prefer some cayenne pepper.

    Tomato and Basil Soup Recipe

    Ingredients

  • 800 grams of tomatoes
  • 2 tbs of caster sugar
  • 1 good handful of basil leaves
  • 150 grams of fresh cream
  • Water to top up (can also use vegetable stock)
  • Salt & pepper to taste

    Many ingredients go well together but none better than tomato and basil. The recipe below makes a wonderful soup and is ideal at any time of the year.

    Chop up the tomatoes and add to your soup maker. Grab a good handful of basil leaves and crush in the hand before adding to the maker.

    Add the caster sugar and cream and then top up with either water or vegetable stock. You can salt and pepper to your own tastes.

    This is best made on a smooth or blended setting on your soup maker for 21 minutes.

    How To Serve Your Tomato and Basil Soup?

    I think this soup works best with a simple swirl of cream. That along with some crusty bread and a little butter works really well with this wonderful simple and basic soup.

    Cream of Broccoli Soup Recipe

    Ingredients

  • 1 medium broccoli
  • 1/5 medium courgette
  • 1 small onion
  • 1 tsp oregano
  • 1 tsp thyme
  • 500 ml of water
  • 2 tbsp greek yoghhurt
  • Salt & Pepper to taste

    Dice the  onion as fine as you wish and chop the courgette to about 1 cm cubes.  These veg can then be added to the soupmaker.

    Take your broccoli and break off the florets to a medium size and add this in. Then add the water and seasoning. The amounts are a guide only and you  should feel free adjust to taste for future batches of soup.

    How To Serve Your Cream of Broccoli Soup?

    I think this soup works best with a little Greek yoghurt added to it. It gives the soup a lovely creamy texture and really rich flavour. Some people prefer crème fraiche. If you have it available some fresh parsley that has been freshly chopped can add the finishing touch before you bring this wholesome soup to the table.

    Butternut Squash, Chilli and Coconut Soup Recipe

    Ingredients

  • 2 tbsp. olive oil
  • 1 medium onion
  • 500g butternut squash
  • 3 cloves of garlic
  • 1/2 red chilli
  • 1 tsp. ground cumin
  • 1 tsp. fresh grated ginger
  • Juice of 1 lime
  • 10g fresh coriander roughly chopped
  • 800ml vegetable stock (2 stock cubes)
  • 100ml coconut milk
  • salt and pepper to taste
  • COOKING INSTRUCTIONS

    When you have everything prepared you first of all set your soupmaker to the saute function by pressing the button on the handle. Then add the olive oil to your soupmaker and allow to warm.

    The butternut squash should be de-seeded, peeled and cut into small cubes ready to be added to the oil. Add the chopped onion and sliced garlic cloves together with half a large red chilli and the ground cumin.

    Continue to saute for just a couple of minutes until you feel the ingredients are beginning to soften sufficiently. Switch off saute function.

    Season to taste with salt and pepper.

    The remainder of the ingredients are then added before switching to auto mode.

    You will see in the video above that the chunky mode is chosen for cooking and then the soup is blended to taste afterwards. That sounds like a good way to end up with a consistency you prefer.

    How To Serve Your Butternut Squash, Chilli & Coconut Soup?

    As usual my preference for home made soup is to add a little fresh cream. With this Butternut squash, Chilli and Coconut soup I also think a plain white roll is the best accompaniment so not to take away from the flavours in the soup.

    Carrot and Coriander Soup Recipe

    Ingredients

  • 25 grams of butter
  • 1 small chopped onion
  • 1 chopped garlic clove
  • 400 grams of carrots sliced or diced
  • 1.5 tsp of ground coriander
  • 700 ml of chicken stock
  • 1 tsp Tomato Puree
  • Salt & Pepper to taste
  • COOKING INSTRUCTIONS

    You want to put the butter with the chopped onion and garlic clove. If your soup maker has a sauté function use that, or alternatively sauté in a pan until soft. Then add to the soup maker.

    Add the carrots, coriander, and stock to the soup maker. You can add your salt and pepper at this stage and I find adding plenty of pepper makes this soup taste even better.

    Simmer for 21 minutes in the soup maker. This timing is ideal for Morphy Richards soup makers. You may find other models differ a little so check your instructions.

    Season to taste with salt and pepper.

    How To Serve Your Carrot & Coriander Soup?

    I think this soup works best with a little fresh cream added to it. Some people prefer crème fraiche or Greek yoghurt. If you have it available some fresh coriander that has been freshly chopped can be added both for extra flavour and a good presentation.

    Easy Cream of Potato and Leek Soup Recipe

    Ingredients

  • 500 grams of potato
  • 200 grams of leeks
  • 100 grams of onions
  • 100 ml fresh cream
  • 1 vegetable stock cube (made into liquid stock)
  • Pinch of salt and pepper to taste
  • COOKING INSTRUCTIONS

    Chop the potatoes, onions and leeks and pop these into the soup maker. (Some soup makers now have a chopping facility and if this is the case just throw the whole potatoes, onion and leeks into the soup maker and give them a quick blitz.)

    Make up the vegetable stock and add it, along with the cream, to the soup maker. Set to smooth setting.

    Simmer for 21 minutes in the soup maker or until all the vegetables are tender. This timing is ideal for Morphy Richards soup makers. You may find other models differ a little so check your instructions.

    Season to taste with salt and pepper. When the soup is ready, serve and add a drizzle of fresh cream.

    How To Serve Your Easy Cream of Potato & Leek Soup?

    I think this soup deserves either some warm crusty bread or better still a freshly baked roll to get the best taste from it. I love to use the part baked rolls available from your local supermarket, usually in packs of four or six.

    This is a great warming and wholesome snack for any winter’s day.

    Top Tip: Using organic vegetables will make this already delicious soup even more appetising

    Pea Ham & Mint Soup Recipe

    Ingredients

  • 600 grams of peas
  • 225 grams of chopped or shredded ham
  • 20 grams of mint
  • 100 grams of diced potatoes
  • 1 ham stock cube
  • 75 ml crème fraiche
  • 800 ml water
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • COOKING INSTRUCTIONS

    Start by making a quick ham stock, by boiling the water and adding the stock cube to that and stir it up really well.

    Add all the ingredients (except the olive oil and crème fraiche) to your soup maker and then add the ham stock.​ 

    ​Now turn on your soup maker, pick the smooth or blend setting and allow to cook for about 25 minutes or until the vegetables have cooked through. 

    When the soup is ready you can add salt and pepper to taste. If you want you can also give the soup an additional quick blend for about 20 seconds. If you like you can also add crème fraiche to this as well.

    How To Serve Your Pea, Ham & Mint Soup?

    I love my soup along with a bread roll of some kind or even a piece of wheaten bread. I guess it depends if you are on a diet or not as to whether you butter the bread. Creme fraiche is also a nice additive but again that will depend on your diet.

    I do love the taste of this soup. Some people do prefer it without the mint, but I do like that extra little taste sensation in there.

    Quick and Easy Root Vegetable Soup

    Ingredients

  • 2 carrots
  • 1 parsnip
  • 1 celery stalk
  • 1/2 butternut squash
  • 1 medium sweet potato (ordinary potato is also good)
  • 1 red pepper
  • 3 garlic cloves
  • 350 ml vegetable stock
  • Salt and pepper to taste
  • COOKING INSTRUCTIONS

    Peel the carrots, parsnip, butternut squash and potato. Cut them into cubes. Roughly chop up the red pepper and the celery stalk. Chop the garlic finely.

    Add all the ingredients to your soup maker and then add the vegetable stock.​ Now I do like my soup to have a bit of a kick. To do this I would add some ginger or even a small chili, but I will leave that up to you.

    ​Now turn on your soup maker and allow to cook for about 25 minutes or until the vegetables have cooked through. Depending on the type of soup maker you have, you can select one of its settings for chunky soup or a blended soup.
